Peanut Butter Veggies & Noodles

This was delicious. It is always fun to try new recipes & use what veggies you have in the fridge. Cooking can be easy and relaxing, put on the tunes, and cook up some healthy and easy food. Add some chicken or pork to this to up the protein. So good with the peanut sauce. Enjoy!
Yield: 2 servings

Ingredients:

1/4 c water
-
1/4 c natural PB (I used crunchy and it was perfect)

2 Tbsp soy sauce

1 Tbsp sesame oil

1 Tbsp garlic spice

1 tsp ground ginger
-
1 Tbsp maple syrup or brown sugar

1/2 fresh lime juice
-
Dash chilli pepper
-
Sea salt & ground pepper
Instructions:
Heat all ingredients on low in a saucepan and whisk well.
I used 2 servings of Asian noodles which take 3 mins to cook. But any long noodle works. Drain, then distribute into 2 bowls.
Spread sauce on noodles and add cut up red & yellow peppers, cucumbers, carrots and fresh basil.
Sprinkle peanuts on top.
