Coconut Pecan Power Balls

This recipe makes 12 servings (24 balls). Each serving provides 18 g of protein.

 

Ingredients

  • 500 g of Medjool dates

  • 1/4 cup (60 ml) chia seeds

  • 1/3 cup (75 ml) almond butter

  • 1 tsp (5 ml) cinnamon

  • 1 tsp (5 ml) pure vanilla extract

  • 1 cup (250 ml) of protein powder (vanilla or chocolate)

  • 1/2 cup (125 ml) pecan pieces

  • 1/2 cup (125 ml) unsweetened shredded coconut

 

Preparation

1) Begin by soaking dates in hot water for 10 mins to soften. Remove pits and blend in a food processor or high powered blender with ½ cup of water.

 

2) Add chia seeds, almond butter, cinnamon, vanilla extract and protein powder and mix well. Place date mixture in refrigerator to chill for 1 hour.

 

3) In the mean time preheat oven to 350 ° F. Spread pecan pieces evenly on a baking sheet layered with parchment paper and toast for ~5 min (do not burn). Set aside to cool. Once cool, crush pecans with a rolling pin.

 

4) Measure out 1 tbsp of date mixture and roll into a ball. Sprinkle crushed pecans and shredded coconut on a piece of parchment paper. Roll in coconut and pecan mixture. Place in freezer until frozen and for storing.
